- Slice a fish filet into about 1 square inch rectangles.
- Slice green onion to 1 inch long.
- Slice ginger.
- Slice red bell pepper for decoration.
- In bowl, combine sliced fish filet, cornstarch, egg white, cooking wine and salt; mix well.
- Heat 2 tbsp of oil, stir fry slightly the sliced ginger and red pepper.
- Add fish, wine; stir-fry and mix well, then add sauce.
- Add sliced spring onion, then stir-fry, mix it well, dish up.
