- Fresh chicken breast and chicken drumstick
- Salt 2 tbsp
- Chinese prickly-ash 4 - 5
- Ginger 2 small sliced pieces
- Cooking Wine 300 ml

Preparation
|
- Clean chicken breast and drumsticks.
- Spread salt and Chinese prickly-ash evenly over chicken breast and drumsticks in a container, add cooking wine, then cover it up in refrigerator.
- Marinate the salted chicken for about 3 days.
- When the chicken meat shows light red color, it means ready to cook.
- Cook the well-marinated chicken in the boil water with 2 small sliced gingers.
- Chill the chicken with sauce into refrigerator for 6 hours.
- Chop chicken into small parts as desired, dish up and serve.
